Living in Hudson County means plenty of opportunities to sit by the water, soak in the sun, and sip on chilled rosé. And there’s no better way to complement a summer day than with a plate full of delicious oysters. An acquired taste for some but loved by many, these salty, brine-y mollusks are wonderfully bite-sized (so feel free to indulge) and perfect to share with a crowd. If you’re looking for prime oyster slurping all day long, we’ve got all of the places to get your seafood on in Hoboken, Jersey City, and beyond — but first, a little oyster education:

Most restaurants will usually feature a combination of both West Coast and East Coast oysters, or just feature what’s in season. Others will get more specific, providing the name of the oyster, which can help to define the taste palate and region that it is from. West Coast oysters tend to be meatier and sweeter and have more of a fluted edge with a deeper shell; while East Coast oysters are defined as chewier, smaller, and have more of a salty taste. Read on for a list of the best places to order fresh oysters in Hoboken, Jersey City, and beyond.
