4 DIY Spring Drinks to Celebrate the Season

Put away the scarves and bust out those peep-toes because spring is here! Finally. When you’re done swapping your sweaters for sun dresses, head outside to your favorite local spot and enjoy a cocktail or two {or three, we won’t judge} outdoors. But if you can’t get to the bar or just want to try your hand at your own mixology, we’ve concocted a list of five DIY spring drinks to celebrate the season.

As huge brunch and #SundayFunday advocates, we usually recommend spending your Sunday sipping Ginger Blue Lemonades on the rooftop at City Bistro {Pier 13, we’re coming for you next since you’re opening Saturday}. Blueberry vodka, fresh lemonade, topped with ginger beer and fresh blueberries? Yeah, yum. But if you’re among the many who will be home this weekend celebrating Easter with the fam, do not worry: whip up the Ginger Blue No. 2 below {inspired by City Bistro’s oh so delicious blueberry lemonade} for you and your loved ones. So, whether you’re heading out of town or sticking around the Mile Square, pick up everything you need right here in town and cheers to the weekend!

Ginger Blue No. 2

A colorful twist on City Bistro’s blueberry vodka lemonade calls for fresh berries and thyme syrup for an extra hint of spring and a pretty purple-pink hue.

1 ½ oz. Vodka
3 oz. Fresh Lemon Juice
1 oz. Thyme Simple Syrup**
5-7 fresh Blueberries
Ginger Beer

In a cocktail shaker, muddle fresh blueberries and thyme syrup. Add vodka, lemon juice, ice and shake. Strain over fresh ice into a Collins glass. Top with ginger beer and garnish with lemon wheel, thyme sprig and blueberries.

Oh, blueberry vodka dranks not yo’ thang? Here are a few other spring sippers to enjoy:

Thyme Cucumber Cooler

This gin cocktail is perfectly refreshing with crisp cucumber and elderflower, a seasonal must-sip.

1 ½ oz. Gin
½ oz. Elderflower Liqueur
¾ oz. Fresh Lemon Juice
¼ oz. Thyme Syrup**
2 Cucumber slices, quartered
Club Soda

In a cocktail shaker, muddle quartered cucumber and thyme syrup. Add gin, elderflower, lemon juice and shake with ice. Double strain over fresh ice into Collins glass. Top with club soda and garnish with cucumber and thyme sprig.

Hibiscus Spritz

Perfect for your Italian-style Easter Sunday dinner or brunch, upgrade your Aperol Spritz with fresh-brewed hibiscus tea and lemon.

1 oz. Aperol
2 oz. Fresh Brewed Hibiscus Tea
1 oz. Fresh Lemon Juice
Prosecco

First, brew and chill hibiscus tea to room temperature. Add first three ingredients to a cocktail shaker and shake with ice. Strain over fresh ice into wine glass, top with Prosecco and garnish with lemon wheel and basil sprig.

Bergen Bramble

If you say you don’t like whiskey, we’ll only believe you until you try this cocktail. Highlighting NJ’s widely grown blackberries, this crushed ice cocktail is ‘gram worthy and pretty darn tasty, too!

1.5 oz. Rye Whiskey
¾ oz. Fresh Lemon Juice
½ oz. Simple Syrup (1 part water, 1 part sugar)
1 barspoon Blackberry Liqueur (Crème de Mure), optional
3-4 Blackberries
4-5 Basil Leaves

Muddle blackberries and basil syrup in a cocktail shaker. Add whiskey, lemon juice and ice. Shake and double strain into Rocks glass over crushed ice. Top with more crushed ice and float one barspoon of blackberry liqueur, garnish with fresh basil sprig + blackberries.

**Thyme Syrup: add ¾ c. water and ¾ c. sugar to a boil in a small pot, stirring to dissolve sugar. Once sugar fully dissolves, reduce heat to simmer and add 4-5 fresh thyme sprigs. Cover and remove from heat, let steep up to 30 minutes. Strain into sealable container and refrigerate until use, keeps up to 1 month, makes 10 oz.

No matter which of the above you decide to shake up, Sparrow’s Wine & Spirits in town will have just about everything you need from the gin and whiskey to ginger beer and club. {Only caveat is the blackberry liqueur, which you can grab that from Jersey City Buy Rite, but again it’s optional.}
